Lexena, KS – The Lenexa Public Market recently announced the exciting addition of Chilakillers, a new establishment specializing in authentic Mexican cuisine. Chilakillers, which began its journey as a food truck, will soon join the diverse collection of locally-owned businesses within the market.
Scheduled to open later this spring, Chilakillers is poised to become the latest tenant at the market, situated at 8750 Penrose Ln. This new addition will fill the void left by Red Kitchen’s departure earlier this year, as owner Alejandra de la Fuente opted to pursue a standalone location in downtown Overland Park.
Chilakillers will complement the recent influx of successful businesses at the market, including Cardboard Corner Cafe and Kimchi and Bap. Diners can expect a delectable array of traditional Mexican fare, featuring tacos, tortas, nachos, quesadillas, street corn, and tres leches cake. Additionally, the restaurant will, of course, offer chilaquiles – the namesake dish consisting of crispy tortilla chips layered with meat, melted cheese, and salsa.
The concept behind Chilakillers originated as a food truck in 2022, spearheaded by owner Fernando Borrego. The mobile eatery’s growing popularity within the community, including successful pop-up appearances at Lenexa Public Market events, ultimately fueled the decision to expand into a permanent, more spacious location.
